Chili Today, Hot Tamale

I am not a chili fan (and it doesn’t like me either), but the Y chromosomes in the house are big fans. My DH especially loves chili, but I really don’t like the canned slop that they sell in the store. In perusing the labels, I’ve been Horror Struck! (insert rolling of eyes and gnashing of teeth here). This is also not taking into account that the “serving size” is less than half a can and the nutrition info is labeled thusly. You need to do the math to determine how much artery clogging sludge is in each can, because let’s face it, does your Manly Man eat 1 cup (246 grams) at a time or eat the whole can? The whole can of course! One little gem has 180 fat calories/20 grams fat (aka: 30% of your daily value) and 8 grams of saturated fat which equals 40% of your DV. Fiber and sodium are equally off the charts.

Keeping this in mind for my men, I made chili. I made CI’s Simple Beef Chili with Kidney Beans, to be precise. None of them like green peppers, so those were left out and I eased up on the amount of heat: I halved the cayenne and chili powder and only used about a teaspoon of cumin – it’s one flavor they haven’t grown to like yet.

They loved it. Men/boys sitting around snarfing chili, crunching up saltines and making low grunting noises over their bowls. Just sampling it to get the seasonings right gave me heartburn. Nope, male bonding and chili. I’m good with that.


Cooks Illustrated Simple Beef Chili

Good choices for condiments include diced fresh tomatoes, diced avocado, sliced scallions, chopped red onion, chopped cilantro leaves, sour cream, and shredded Monterey Jack or cheddar cheese.

Makes about 3 quarts, serving 8 to 10

2 tablespoons vegetable oil or corn oil
2 medium onions, chopped fine (about 2 cups)
1 red bell pepper, cut into 1/2-inch cubes
6 medium cloves garlic, minced or pressed through garlic press (about 2 tablespoons)
2 pounds 85 percent lean ground beef (see variations below)
2 (15-ounce) cans red kidney beans, drained and rinsed
1 (28-ounce) can diced tomatoes, with juice
1 can (28 ounces) tomato puree
Table salt
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
1 teaspoon red pepper flakes
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper

1. Heat oil in large heavy-bottomed nonreactive Dutch oven over medium heat until shimmering but not smoking, 3 to 4 minutes. Add onions, bell pepper, garlic, and spices; cook, stirring occasionally, until vegetables are softened and beginning to brown, about 10 minutes. Increase heat to medium-high and add half the beef; cook, breaking up pieces with wooden spoon, until no longer pink and just beginning to brown, 3 to 4 minutes. Add remaining beef and cook, breaking up pieces with wooden spoon, until no longer pink, 3 to 4 minutes.

2. Add beans, tomatoes, tomato puree, and 1/2 teaspoon salt; bring to boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour. Remove cover and continue to simmer 1 hour longer, stirring occasionally (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer), until beef is tender and chili is dark, rich, and slightly thickened. Adjust seasoning with additional salt. Serve with lime wedges and condiments if desired.

The Big Apple and an Award!

Hi! I'm back! The big secret was that we flew up to New York for a surprise party for my dad's 70th Birthday. I have no idea who in my family actually reads this thing, but didn't want to take any chances on blowing the surprise so I needed to keep it hush-hush. All in all we were there for about 5 days - we decided to add a couple of days to the trip, pull the kids out of school and see some of the fantastic sights that the city has to offer.

This is me and my sister in Battery Park getting ready to take the ferry out to see the Lady herself. I had hoped we'd both get to wear crowns, but since that wasn't an option, I took the torch and here I am lifting my lamp beside the golden door.

The NYC Wine and Food Festival was going on while we were there but everything was sold out and I don't think I could have convinced the kids that seeing Alton Brown, Rachael Ray and Bobby Flay would be more exciting than visiting The Whale at the Museum of Natural History (more about the whale later - I'm personally rather disappointed about the whale). I've got to download all the rest of the pics we took and sort thru them, but I'll share soon.

While I was gone, the lovely and talented Barbara of Barbara Bakes gave me the "E for Excellent" Award! Thanks so much! What a nice surprise for ME to come home to. I in turn, would like to share this Most Excellent Award with some bloggers who I think are pretty neat: Nancy at A Recipe a Day always has recipes that I think my kids will eat; April Marie of Girl Japan offers up a unique perspective on life abroad with social commentary (and food) in the mix; and finally Lisa who lives on The Cutting Edge of Ordinary who generously shares her family and food with all of us.

Someone Thinks I'm Brilliante!

While I was out, it seems that the awards gods have again smiled on me.

Nancy at A Recipe a Day gave me a Brillante 2008 award. Thanks Nancy, I’m so happy you like my blog! It’s really a nice feeling that people have run across my hatchlings musings and enjoy them.

My First Major Award

Nancy of The Dogs Eat the Crumbs nominated me for this award! Thanks so much, Nancy... I {{heart}} your blog too!

There are so many sites I {{heart}} and subscribe to in my google reader. These are just a handful of the many talented and clever bloggers out there that I’d like to give a Major Award to.

Baking Obsession – I so aspire to be like Vera one day. Her photography is absolutely pitch perfect and the presentation is always so unique and unexpected.

Brown-Eyed Baker – Chelle has fabulous recipes and beautiful photography. I need to know her secret on how she stays so slim with all the baked goodies she whips up!

Chocolatechic – talks to you like you’re sitting across from her at the kitchen table. She blends her real-life day to day experiences with delightful recipes. I love that she shares pics of her family (and neighborhood!) with everyone.

Clumbsy Cookie – desserts and cookies with the occasional song lyric reference. What’s not to love?

Culinary in the Desert – Joe makes all manner of really good food from entrees to sides to (yes) dessert (with 2 “s”es). The pics of his blue-eyed pooch Gus will make your heart melt.

Dinners for a Year and Beyond – has recipes my kids might actually eat without a showdown. The fact that she also has a “No Thank You Boy” brings her even closer to my heart.

La Bella Cook – Bridgett has a great blend of sweet and savory recipes. I love her photography and the wide range of ingredients she uses.

Sticky Gooey Creamy Chewy – Susan is a class act all the way around. Not only does she have the most amazing recipes, she has a great sense of humor and knows her way around the kitchen with a camera. Her éclair photos could go in a magazine.

The Cutting Edge of Ordinary – also named Lisa, she has great recipes and a wonderful wry sense of humor. Love the photos of her garden and food.

Vanilla Sugar – Dawn makes the most amazing looking desserts. Reading the actual recipes and looking at the great photography makes me want to jump up and start cooking (or eating).
